I have decided that they used Simon because it rhymed alone, but the beaver thing came from the fact that owls perch and live in trees, and beavers chomp trees to make their own homes, so owls and beavers are in an eternal war over their homes being torn down/built up.

Although I haven't decided if Simon is actually a beaver yet.
